Eru is a vegetable dish from Cameroon made with shredded eru leaves (also known as okok or okazi) and waterleaf (or spinach), palm oil, crayfish, and various proteins like smoked fish or beef, traditionally served with a “swallow” like fufu, garri, or eba. “Swallow” refers to the starchy, dough-like staples that are “swallowed” with the soup, rather than chewed, which includes foods like fufu, garri, or eba.

Eru (The Dish)
  • Main Ingredients: Finely shredded eru (okazi) leaves, waterleaf or spinach. 

  • Flavor Base: Palm oil, dried crayfish, smoked fish, beef, or kanda (cow skin).
  • Spices & Seasonings: Salt, pepper, and seasoning cubes (like Maggi).
  • Preparation: Waterleaf or spinach is typically cooked first to soften it, followed by the eru leaves. Palm oil, crayfish, and proteins are added, and the mixture is simmered to allow the flavors to meld.
“Swallow” (The Food)
  • Definition: 
    “Swallow” is a general term for starchy, dough-like foods, most common in West and Central Africa, that are typically served with soups and stews.
  • Why “Swallow”: 
    The term refers to the practice of consuming these foods with minimal chewing, allowing them to be swallowed whole with the soup.
  • Examples:
    • Fufu: A popular, well-known swallow.
    • Garri: Made from cassava, it’s another common swallow.
    • Eba: Another cassava-based staple.
    • Other swallows may include eba or semolina.
